In Cusco, the Catholic celebration of Corpus Christi is fundamentally unlike anywhere else in the world. When the Spanish Conquistadors arrived in the 16th century, they were shocked to witness the Incas parading the mummified remains of their ancestors through the main square in a grand festival of reverence and feasting.
To eradicate this "pagan" practice, the Spanish replaced the mummies with the statues of Catholic saints. However, the Andean spirit was never extinguished; it simply adapted. Today, Corpus Christi in Cusco is a colossal, joyous pageant where Catholic iconography is celebrated with undeniably indigenous fervor, music, and organization.
The Gathering of the 15 Saints
The core of the festival involves 15 life-sized statues of saints and virgins, representing different historic parishes of Cusco. On Wednesday (the day before the main procession), these heavy cedar statues—some weighing over a ton and adorned in robes of gold, silver, and precious gems—are carried on the shoulders of devotees from their respective churches to the Cathedral.
This journey is known as the "Entrada" (The Entry). Along the way, the saints often "meet" each other, "bow" to one another in elaborate choreographies, and are accompanied by competing brass bands, traditional dancers, and a deeply emotional crowd. The statues remain in the Cathedral for a week, supposedly debating the fate of the city, before returning to their parishes in the spectacular "Octava" (the eighth day).
The massive litters, coated in hammered silver, require dozens of men to carry. The competition between parishes regarding whose saint is most beautifully adorned is a hallmark of the festival.
The Epicurean Adventure: Chiriuchu
For the epicurean traveler, Corpus Christi is synonymous with Chiriuchu (literally "cold chili" in Quechua). It is the signature dish of Cusco, consumed almost exclusively during this festival. Historically, it represented the gathering of foods from the different altitudes of the Inca Empire.
Chiriuchu is a complex, savory platter served entirely cold.
